Preheat oven to 350 degrees F. whisk 6 eggs with salt and pepper. Sauté the sweet potatoes until soft and golden. Move them to another dish and fry the kale, a small red onion and 2 cloves of garlic. Then stir in the potatoes, pour the egg mixture over the vegetables and cook for another 3 minutes. Bake at 350 degrees F 10-15 minutes (until set). If desired, you can sprinkle your Frittata with goat cheese.

This recipe is perfect for lunch, it is fast and does not even require cooking! Edamame is an excellent source of protein and plant fiber, making it a great ingredient for many meals. Add corn, green onions, peppers, coriander and a small amount of olive oil, mix the ingredients and leave for a while.
